This afternoon the Woolly Wednesday knitting group were treated to Melting moments filled with passionfruit butter cream. The passionfruit butter cream is gorgeous and I intend to try it on cup cakes. This recipe is from the "Baking recipe collection" by Sainsbury's.
Ingredients:- Biscuits 170g butter
60g icing sugar
170g plain flour
60g cornflour
1 teaspoon of vanilla essence
Filling 80g butter
80g icing sugar
1 passionfruit (juice and seeds)
Preheat the oven to gas 4 or 180c. Then grease a baking tray or line it with baking parchment.
Beat together the butter and icing sugar. It is easier if the butter is at room temperature. Add the vanilla essence followed by the flour and beat untill all the ingredients are combined into a dough.
Divide the dough into 16 pieces, roll each piece into a ball and then flatten it to a disc with a floured fork. Place half of the biscuits on the baking sheet and bake for about 15 minutes or until they are just turning brown. Place to cool on a wire rack and bake the remainder. To make the filling beat together the butter and icing sugaar until light and fluffy, then beat in the passion fruit. Make sure the melting moments are absolutely cold before you sandwich them together. I was in too much of a hurry, and the butter cream melted slightly in the second batch.
